In Mexico, really?

I'm Mexican expatriates living in the U.S. for the past 7 + years. Born and raised in northern Mexico, the food was an integral part of my education. The recipes are handed down from generation to generation and 100 years old recipes are still part of everyday cooking in Mexico.

Throughout my adolescence and early adult years I developed a passion for cooking. I devour cookbooks and religiously watched the programs on the satellite kitchen. So come to the U.S. in 2001, had a solid foundation in Mexican food and a decent understanding of foods States States .... Well at least I thought I had.

In addition to the first night I spent Thanksgiving in the U.S., when I left at 6 pm for "taking something to eat "(and, of course, ended up having a pleasant dinner of junk food at home), the biggest surprise for me was to find" Mexican "food all over the place ... awesome! Restaurants carry a variety of "Mexican" dishes, grocery stores have a "Mexican" aisle ... This is not so bad, I thought. So I decided to give one of these "Mexican" places a bid, hoping to cure my homesickness a little. So I got there, and although the decor of the place made me feel at home in Dora the Explorer, I stayed on the track and decided to order.

So I thought I would with something authentic to take me back home. So I took the enchiladas. There's nothing more satisfying for me as a dish of oil dipped, stuffed with cheese, corn tortillas with cheese further. Long story short, the board have in fact take me back home .... Screaming for my mom! When I got to my plate Sincerely, I thought I had gotten the wrong order. All I could see was a kind of yellow cheese melted on top of a sea of red sauce suspicious. I asked my server, if these are the enchiladas and unfortunately, been confirmed.

So here I am, in front of a mass of lettuce, melted cheese mixed with red sauce, sour cream and who knows what else underneath it. And unfortunately, I knew exactly as it looked. Not bad at all, just a bunch of different flavors in progress and not a drop of Mexican flavor to it. Now that I'm a little more Americanized, I can describe what the dish tasted like: flour tortillas filled with chili, covered in tomato sauce and topped with Velveeta. Again, it was not bad, just not what I expected.

So from that day, I was in my little mission of trying to educate the "gringos" about the true essence of authentic Mexican food. I guarantee that you will be surprised to learn most of their dishes Mexican favorites are not as authentic. Would you believe Margaritas are not popular among people in all the Mexicans? Apart from American teenagers get high during spring break in Cancun and the ordinary American tourist, Mexicans do not drink that. Something similar happens with so-called "Cinco de Mayo" celebration. Did you know that most Mexican companies do not even observe this holiday? Government agencies and universities, but not an official national holiday. And really, there is not a lot of celebrating going well. This festival is actually much bigger here in the U.S. which is in Mexico .... Go figure.

Hence, this is the kind of thing that makes me go mental. I know, it's just food, but is food I grew up, the food of my ancestors, and the fact that there are self-proclaimed Food Mexican authorities and places out there to earn a living in it, makes me shiver.
